Chocolate Chip Salted Caramel Cookie Bars

Our Grammar-level students are having a blast in our Batter Up Baking Club! Enjoy this recipe we made together this quarter.

Ingredients

  • 2 1/8 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 12 TBS butter, melted and cooled
  • 1 cup light brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 bag chocolate chips (mini chips or regular- your choice!)
  • 1 bag caramel bits or (about) 38 caramels
  • 3 TBS heavy cream (milk works, too)
  • Sea Salt for sprinkling over caramel and bars

Directions

  1. Melt butter and cool to room temperature.
  2. Preheat over to 350 degrees.
  3. Grease a 7x11-inch pan.
  4. Whisk together flour, salt, and baking soda. Set aside.
  5. Beat butter and sugars until combined. Add eggs.
  6. Add vanilla.
  7. Slowly add the dry ingredients. Do not overbeat.
  8. Stir in chocolate chips.
  9. Combine caramels with heavy cream (or milk) in a microwave-safe bowl. Microwave on high until melted, stirring every 20 seconds.
  10. Divide cookie dough. Press the first half into the pan.
  11. Pour hot melted caramel over cookie dough. Sprinkle with sea salt.
  12. Drop spoonfuls of the rest of the dough over the caramel layer. Sprinkle salt on top.
  13. Bake for 40-45 minutes.

    Serves: 16 bars.
